It’s only the second week of Foodie Friday and a trend is already developing here… recipes I’ve found on Pinterest and loved. I already have friends telling me they loved the simple Pumpkin Pie Smoothie from last week, via Pioneer Woman.
They are certainly not my original creation but I have tried, tested, LOVED and want to share these recipes with YOU!
Besides, there’s nothing truly new under the sun ;)
These Crock Pot Enchiladas have been a hit in our house. I packed up the leftovers and sent them with the baby to the sitter’s house after he ate every last bite for dinner the night before. They RAVED at how well he ate his lunch, making their job easier than usual and told me I better be bringing more with him!
I never knew until I tried this recipe for the first time, {I’ve already made it multiple times!}, how easily chicken shreds after being in the crock pot.
This recipe is a gal’s best friend: 4 simple ingredients that you almost literally throw into the crock pot, open it a few hours later, stir in sour cream and scoop it into a tortilla.
FINITO!
Some optional {still easy!} ingredients we’ve played with adding to this recipe, if you’re in the mood for just the tiniest bit of extra effort:
- guacamole
- sour cream
- shredded cheese
- chips and salsa on the side
- black beans
- chopped green or red onion
- CILANTRO!
{We add cilantro to nearly every meal around here – hubby and I believe everything is better with a little chopped cilantro♥}
